Sugar-Free Banana Cookies

2 large bananas, mashed
2 cups rolled oats
1 cup chopped dates
1/3 cup oil
1 tsp vanilla extract


Combine bananas,oats,dates,oil,vanilla. Allow to rest 15 minutes to let flavors mingle. Preheat oven to 350 degrees. Drop by teaspoonfuls onto an ungreased cookie sheet and bake for 20 minutes or until brown. Makes about 30 cookies.

TIPS: Riper bananas make the sweeter cookies. Easiest way to mash bananas, a potato masher. Easiest way to chop dates, cut with kitchen shears.
