German Potato Salad

Here is something different to try at your next cook-out. I make mine in an electric wok and it does well for me. I find this wok is handy for a lot of picnic cooking and would not want to be without mine.

German Potato Salad

Get all ingredients ready before beginning the cooking.
Prepare/measure the following ingredients.
Peel and slice 5-6 cups of potatoes. Microwave until just done but not mushy.
Microwave 5 strips of bacon until crisp... (save 2 tbsp of the dripping.)
Peel and chop one medium onion.
2 tbls flour
1/3 cup of cider vinegar
1-1/3 cups of water or chicken broth.
1/4 cup sugar or less depending on taste.
1 tsp salt, pepper to taste

In a deep skillet, add the drippings and onion. Fry until done.
Stir in the flour, blend well.
Add the vinegar and water/broth and cook until bubbly and slightly thick.
Add the sugar and stir until dissolves.
Add the potatoes and bacon, stirring lightly until potatos are coated well.
Serve warm..
Yield 6-8 servings..
