In my opinion, any of those you listed will do the job just fine. I'd look at my other requirements and buy accordingly.
We've towed with single rear wheel trucks for many years with never a moment of instability. Maybe it's because my Dodge and the Fords before it all had LT 265 width tires. Whatever it was, no stability problems whatsoever, whether in wind, passing or being passed by semi's, whatever.
That all said, if you're buying new, I'd recommend the 1 ton simply because you get the larger springs, you get the higher ratings, and it costs very, very little more. And you won't need airbags. As for single rear wheel or dually, that's a matter of whether you feel you need the payload rating. If you also tow stock trailers with big animals moving around inside, then I'd go dually for sure.
