Fresh water Fresh
We normally do not dry camp much, so our FRESH WATER supply rarely gets used.
Any methods for keeping the FRESH WATER FRESH ?

I flush it out a few time a year with just plain water, but you can buy tablets to add from places like Camping World.

I drain the fresh water tank and refill before every trip unless it has been a very short time since the last trip. Of course, we are NOT full timers so that works for us. We also use our fresh water along the road and sometimes for coffee and drinking water in preference to the campground water.
I usually carry only 1/3 to 1/2 tank of fresh water at the start of each trip.

The bleach will sanitize the tank and is recommended before using the first time and after setting for long periods. I just read where a couple used 1/2 teaspoon per 10 gallon of water while traveling in Mexico to kill any bacteria that may have been picked up. I have used the bleach to sanitize and then rinsed it out and refilled the tank but I have not tried adding with the teaspoon method and leaving the bleach in the water. It may leave a bad taste.

A small amount of bleach in the water will not harm you. Years ago when we first moved to the farm, our water supply was a lake. The water was filtered and clorinated. The clorinator used regular "unscented" bleach in a drip system. I believe it was in the 1 part in 100 range. We never smelled or tasted it. Other than that, we use only home tap water in our TT. Had a bad experience with some CG water in our water heater. If you are not using the water regularly, drain and re-fill every 2-3 weeks in hot weather to keep it from going stale.

Another method of sanitizing is vinegar, cleans and freshens. I use a gallon in a full tank, let it sit, or take it down the road, then drain it.

For what its worth after picking up tips on this site and other resources I do the following at least once a year, like to winterize, then fill it with fresh water when getting it ready for travel in the early spring.
For a 60 gallon tank I add 4 gallons of "bleached water" ( Bleached Water = 1/4 cup bleach to one gallon water) then fill up the tank. Then open each faucet and run the water until you smell chlorine, shut it off and move to the next faucet. Then leave alone for about 4 hours. Then flush with fresh water until you no longer smell chlorine. I then drain the tanks and leave it like this (after blowing out the lines) for the winter. In the spring I fill it with water and add one teaspoon of baking soda to sweeten the water.

Even though we are fulltimers and don't seem to ever encounter that "stale" water taste (we usually use about 3/4 of our water and have to refill quite often)m we still use a product called "Purogene" in our fresh water. It takes one ounce for 30 gallons of water so about every other time that I refill, I put in two ounces. I don't like the idea of bleach because we did that in one of our other rigs and it seemed we could never completely get rid of the bleach odor and/or taste.
