Personally, I would take I-10. Just my choice.
As for stops along the way, I don't like to give recommendations because my RV park requirements may not match yours. Keep in mind though, New Mexico and Arizona are snowbird destinations and RV parks are already filling up for the winter. I would make reservations NOW.
