In our experience, 8 is adequate but 10 would be much better. One thing most dealers do not do is understand the 8 footer is part of the base price. If you pay for a 10 footer they should credit you for the 8 footer they do not have to install. Our dealer would not credit it, so we stayed with the 10 footer.
$2900? Is that a side by side? In July 2006 the 10 footer with a freezer door and refrigerator door (looks just like the 8 footer) was $1500.
Also, in case you're wondering, the 10 and 8 footers are the same width. The difference is in depth of the cabinets. I don't know about side by side.
I should add, we've been fulltiming 6 years as of the 21st of this month.
