Just follow the instructions on preheating and you are good to go. Just like in a regular oven some things can be cooked without preheating. My Manual that came with it gives a pretty good outline. Cook the came length of time unless it is over an hour and then you can reduce the time some. Once you get used to it your won't use the "hard to light" oven much at all
