Water heater

I hooked up my trailer to 120V today and was doing so miscellaneous stuff in it. It was plugged in for about two hours. When I got ready to leave I remembered that I hadn't emptied the water heater after doing my first test fill on it a few weeks ago. Haven't had it on the road yet. When I removed the drain plug with the anode rod attached to it the water coming out was almost hot. That side of the trailer never gets any sun and I had not turned the water heater on. Does the electric unit automatically come on when the trailer is plugged in to 120V? If so, how do you charge the batteries while it is in storage without water in the water heater? Wouldn't that damage/destroy the unit?
