As others have stated - stay away from Dallas. Take the I-35 W route through Fort Worth. The Czech Stop in West, TX is a must: http://www.czechstop.net/

The Texas Ranger Hall of Fame & History Museum is in Waco and worth the stop. https://www.texasranger.org/

Also, I would have recommended the Elite Cafe in Waco, but they have closed and Chip and Joanne Gaines (HGTV Fixer-upper) have opened it as Magnolia Table - https://magnolia.com/table/.

I-35 will jam-up around Austin. There is no good time to go through Austin just take your time.
