Ok, you asked about I-80 and Nebraska. I'm not the first to tell you to get off the interstate and you'll have an enjoyable trip. Here are just some of the attractions as you cross Nebraska from West to East on I-80.

Note - As you cross Nebraska in mid summer numerous communities are having their Czech and other ethnic festivals which serve incredible food. Also, buy some Dorothy Lynch salad dressing which is made and sold in Nebraska. And if you are crossing Nebraska in the Fall, take in the Sand Hill Crane migration which takes over the Platte River between Kearney and Lincoln. Incredible photography opportunity.
