Much easier than you think. Mine is 16,000 GVWR also and mine come in at 15,600 fully loaded fresh water full all tanks empty. We boondocks most of the time. By time I pack for a two week trip out we come in on the heavy side.
Most people don't boondocks and would not carry as much extra stuff as I do. We travel with our two big labs and all there food on board. Plus a generator and extra gas. So if you do the math it adds up quick. I hope this give you a clue as to how you can add weight fast. Happy travels
