Being close to Ft.Worth you are certainly living in a very hot part of the state. I set my thermostat to auto. I would buy me an thermometer and sit it on the kitchen counter or somewhere close to the middle of the rv. Set your thermostat at 72 or 74 and see how it compares to the thermometer on the counter. It's hard to say what to set you thermostat to until you get a good idea how accurate it is. I would think your thermostat is off 4 to 6 degrees if like most rv's. Just don't let your rv get so hot that your a/c is having a hard time playing catch-up. Texas heat is relentless . Sometimes it doesn't get below 80 degrees at night in Houston.
