When I receive the card with the chip in it, the first thing I do is put it on the anvil and with a hammer, smash the chip. It does not render the card invalid. It can still be swiped or manually inputed into the system.
They also now provide little foil cases. I have one for each of my CC's. It blocks the scanners. If you prefer to use the proximity method of the chip, you could make a block for the card with aluminum foil. Just make a "to size" sleeve, stick it in where you put your CC in your wallet, and slide the card in and out of the aluminum foil to use it. I personally like smashing the little "chippie." It gives me a very temporary satisfaction.
