A hearty soup with a "kick".
Italian Soup
Brown 1# Italian Sausage
(I use mild Italian Turkey Sausage)
Add:
1 med. onion diced
1/2 green pepper diced
2-3 stalks of celery diced
1 sm-med green zuchini sliced
1 sm-med yellow zuchini sliced
(or 2 green)
1 can diced tomatoes
1 can diced tomatoes w/chilies (Ro-tel)
1 can sliced carrots with juice
3 cans of chicken broth
Cook/simmer 30-45 min.
Add 2/3 or 3/4 cup Orzo pasta
Cook 10 min. more or until pasta is done.
*note if too thick just add another can of broth
