#1 - calculate your max towing weights. You really don't want to tow the max.
#2 - load the beast up and weigh it
#3 - off load non essentials - you will do this over time as you won't use some items or can go without.

I carry very little freshwater (I've seen lots of commentary for yes and no). I've pulled a lot of passes out west and don 't choose to haul fresh water up and down them - have always been able to fill up at next destination - even boondocking. One thing you have to watch out for is weight creep as you add items to the rv over time. It'll surprise you.
