We've fought this one [just like everyone else] and came to the conclusion that the relative humidity level is the primary culprit: fan or no fan, 1 AC, 2 AC made no difference. (What freezes is moisture in the air - the more moisture the faster the freeze-up.]

We tested this by starting out with the thermostat at it's highest temperature and then lowering it, if necessary, until the AC just turned on. We then waited until it turned off and, after 5 minutes, dropped the temp ~5 degrees. Repeated the process until the temp was where we wanted it.

No freeze-up.

We also picked up a small dehumidifier that has made a world of difference: since we began using it we haven't had any freeze-up problems at all. We have also kept it running while the rig's at the storage lot between trips to deal with the 98+% humidity around here.
