Post trip "airing out the fridge"

We always included opening the fridge doors to let it air out and dry up on our previous rigs. (Not a fan of mold) Our 3160 makes that more difficult by trapping the fridge against the sink island. Opening the freezer doors are no prob, but you can barely crack open the lower doors. I have found I can insert a couple of paint stir sticks to help prop them open, but that's bout as good as it gets.
I'm really not fond of the idea of cracking that slide out a few inches to get more room, so let's hope it gets enough air to do the job.
