You need to lower your expectations if you have the RV fridge, go with cheaper ice cream that has less butterfat and your ice cream will be harder. The high end ice cream that has higher butterfat content needs a much colder freezer to keep it hard, and lower end ice cream that has less fat will freeze much better. We are experiencing 100 degree days, and our freezer will go up to 15 degrees during the day and by morning down to maybe 10 or 11 degrees. The fridge is usually about 35 degrees. Where we are parked now, the fridge side of the rig faces south, so it is getting full sun during the day.
