At home in the man cave, I use oak wood for BBQ, Traeger for smoke.
On the road I use a gas grill (Cuisinart) and a Blackstone griddle.

I adjust my menus to what I have to use to cook. You can't do the same method with different equipment. I would not presume to smoke meat with what I have available on the road. I can't get oak grill (Santa Maria Style) on a gas grill.

As a chef you have to use what you have at hand.
